材料:螃蟹,虾,贝扇,莲藕,芹菜,花生,花椒,干辣椒,姜,青葱,麻辣调味,郫县豆瓣酱,自制老干妈辣椒油,料酒,盐,糖,味精(可有可无).制法:莲藕切滚刀块放入热水煮大约40分钟后捞出即过冰水沥干备用.螃蟹清理后斩件撒些生粉立即入油锅炸至变色捞出控油,虾与贝扇也入油锅炸至微变色捞出控油.热油锅下蒜,姜爆香,再下豆瓣酱,花椒,干辣椒与麻辣调味入锅转小火煸大约十至十五分钟出色与香味后(我捞出花椒),再放洋葱与花生转大火翻炒,回锅莲藕,螃蟹,虾与贝扇再大火不停翻炒,料酒走边,下青葱,辣椒油,盐,糖,味精等调味炒匀撒上芹菜段再炒片刻即可出菜…
