5,搅拌到,揪一小块面,能拉出薄膜就可以了(照片没有跟上,不好意思),然后滚圆,放在面台上静置15-20分钟。注意盖好毛巾什么的,一定不能干皮。%C

6,把裹入油拍扁一些(包着纸的时候),将面团擀成中间厚,四周薄的面片,比裹入油大一些就行,把裹入油放在面片上

8,包好油以后翻过来,注意别弄破,面很软,台面上可多撒些干面(用高筋面粉)j{SPB'X(H

9,用走槌擀开,没有的话用擀面杖也行,(用保鲜膜的筒或酒瓶的效果会比擀面杖好,估计是因为表面积大的缘故吧)。一定要注意擀几下就要撒些干面,面坯上边下边都要撒 ?-Z;dB!a.E

10,擀到差不多4、5毫米厚,用4折法折(就是左1/4折过来,右1/4折过来,再对折)折好。注意折的过程中要把干面扫干净,要不影响起发。一定要包好,防止干皮,放到冰箱中松弛半小时左右KFMl-h)D{
然后拿出来重复9和10。一共要折3次x^9Th.Lq8n1F
过程:包好油==擀开==第一次折==松弛==擀开==第二次折==松弛==擀开==第三次折==松弛==擀开

11,最后擀到3-4毫米厚,切割,整形。边角料不要扔,放冰箱下面冻起来,下次还能用呢
