1、袋装的酸豆角开封后,要用清水冲洗一下,用厨房纸吸干水再烹调,前者可冲去多余的酸味,后者避免烹调时成菜水分过多。1EkaI)Vc

2、酸豆角喜油,先下锅用油炒一下,可使其酸而不涩,风味更佳。4C8m+A'd%]/E;n;o'q
3、鸡块烹调前,要过一下油,以去除鸡块的血水和异味,吃起来更鲜美好吃。S O'f0c)gs
4、用生粉和蛋清来腌制鸡块,可使鸡肉更加嫩滑,切记蛋清不可多加,否则成菜汤汁会略为浑浊。
