芽菜扣肉

肉洗净煮至断生,趁热搌干水份,在肉皮上抹匀酱油和一点红糖(白糖也可),锅内放油烧至五、六成热,将肉皮炸呈金黄色捞出,切成稍厚的片(约0.5厘米),肉皮朝下贴碗底排列放好
