鲜虾菠菜饺
饺皮∶澄粉8两,生粉2两,澄粉质地好的就不用加生粉,盐1/3小匙,猪油三钱。

澄粉加入盐拌匀,缓缓倒入正滚沸的热水,并以木匙或筷子搅拌,加盖或湿布静置5分钟至稍凉5y/gL%xg2N`~

包紧收口、折边。蒸笼里先放一片红萝卜垫着,然后排入虾饺(间隔排列,以免蒸熟后饺皮互相沾黏),水滚之后,上笼以大火蒸约12分钟即可。*f)Yjq}
